1) Remove the flesh from the leg of the turkey so that the fibers remain hanging from the other end of the bone, and carefully beat off.

2) Leave the drumstick to marinate for 12 hours in a mix of coriander, nutmeg, white pepper, sugar, salt, grated fresh ginger, water and olive oil. Marinade thoroughly mixed and mashed into the broken fibers of the leg.

4) Bake for 25-30 minutes. When ready to remove the rope and decorate with rosemary.
