Crepe Cheesecake

You will need
  • - 250 g of cottage cheese;
  • - 250 ml of milk;
  • - 1 lemon;
  • - 2 tbsp. powdered sugar;
  • - 200 g raspberries or cherries;
  • - 2 eggs;
  • - 120 flours;
  • - 80 g of starch;
  • - 3 tbsp. ground nuts;
  • - 3 tbsp. sugar sand;
  • - salt;
  • - vegetable oil.
Put cottage cheese in a bowl and mash it with a fork, add 2 tbsp of l. milk and mix thoroughly. Wash the lemon, on a coarse grater, wipe off the zest and pour it into the curd. Squeeze the juice from the citrus, combine it with the curd mass, add the icing sugar in it and stir.
Separate the whites from the yolks and whip them into a firm foam. From starch, flour, yolks, nuts, salt and leftover milk, knead the pancake dough. Gently combine it with the whites, stir and bake small pancakes in hot oil.
Put the finished pancake on a plate, top with cheese curd, put some berries on it and cover with another pancake. Thus alternate all pancakes, cottage cheese and berries. Serve ready pancake with hot tea.
