Eggs "mimosa"

Boil hard boiled 6 eggs. Peel off the shell, cut it in half, take out the yolks, mash 4 of them with a fork. Protein clean in the fridge.

Prepare the sauce: Mix 1 raw yolk with 0.5 tsp. mustard, salt and pepper. Pour in 250 ml of olive oil, whipping mixture. Beat until the sauce thickens. Add chopped yolks, then a little chopped parsley.

Put the mixture in egg whites. Crush the remaining 2 yolks in a garlic press and sprinkle with the eggs.
