Eggplant wash, cut circles about 1 cm thick and fry on both sides until light brown crust. Put tomato sauce on the bottom of a greased baking dish and spread a layer of fried eggplants mixed with circles of fresh tomatoes on it. Salt and pepper to taste, sprinkle with chopped garlic, dried herbs and grated mozzarella. We spread another layer of vegetables, seasoned and sprinkle with cheese. We bake in a well-heated oven until the cheese crust acquires a golden brown color.
